Cheeseburger Soup (a la Diners, Drive-Ins, and Dives)!

“Hello. My name is Amanda, and I’m addicted to The Food Network” BWAHAHA….

But, really, let’s get serious. I could have Food Network on 24/7 and love every minute of it.  The worst part? Seeing something AMAZING and knowing that you either need to take a cross-country trip to eat it, or come up with your own recipe 😉  This happened, YESTERDAY.  I know—it didn’t take long for me to give in to the craving—-it was THAT intense!

Yesterday, while the hubs was taking a mid-afternoon cat nap during the football game, I sneakily switched the channel to 231–The Food Network, and what was on?  Diners, Drive-Ins, and Dives.  I came in on the last part of the show, as he was headed into a place called “Grovers” in East Amherst, NY.  They are known for their burgers, but even moreso for their Cheeseburger Soup.  As I heard this, my eyes grew big and I started to salivate—-yes, I know, I have a REAL PROBLEM!  The lady went through the recipe and I just knew that was going to be delicious—Guy Fieri (the host) said it was amazing, and couldn’t stop eating it.  I knew I had to have it!  This was Sunday afternoon.  Fast forward to 7am on Monday.  I wake up wanting Cheeseburger Soup.  I told you–A REAL PROBLEM!

So, after shoving the hubs out the door for work, I get dressed and haul my butt to the grocery to get the all important ingredients that I don’t keep in the house for this recipe—Velveeta or Cheese Sauce, Half&Half, and lean ground beef.  I was SO READY for this!

This first attempt, I’ve made pretty close to what “Grovers” did, but when I make this again (and I WILL make this again–it is THAT good), I’m going to work a little more at getting the same taste with a few different ingredients to cut down the calories and fat.  Today I could not handle a failure, so I stayed with the somewhat original ingredients 😉

Here’s my recipe from this first attempt:

Cheeseburger Soup

Ingredients:

2 lb 96% lean ground beef

Hamburger seasoning or salt/pepper

1 large onion, diced

1 Tb light butter

1 box (32 oz) Reduced Sodium Chicken Broth

~1/2-3/4 of a 2 lb log (so, approx 1-1.5 lb) of 2% Velveeta Cheese (On the show, she used Cheese sauce from a can, but all I found was Cheese Wiz, and thought Velveeta would work better)

1-1.5 pint Fat Free Half & Half

1 Tb flour

1 Tb cold water (may take a bit more)

3 medium tomatoes, diced

1/2 head of lettuce, shredded

Directions:

In a skillet sprayed with cooking spray, brown the ground beef.  Season with your choice of hamburger seasonings—I used McCormick Hamburger seasoning.  Drain and set aside.

In a large soup pot, add 1 Tb light butter, and diced onion.  Allow the onion to sweat over medium heat.  When the onions become translucent, you are ready to continue.

Add the chicken broth (she used a chicken base–like bouillon + water–but I think it is just easier to use broth), the diced Velveeta and the half & half.  Allow the velveeta to melt into the mixture.

In a small bowl or ramekin, mix the flour and water to make a slurry.  You may need a bit more of water–just add enough to make a smooth mixture, somewhat thin, but not watery (if that makes sense).  Once mixed well, add to the cheesey mixture. Stir to combine, and bring to a boil, stirring constantly (the cheese likes to stick).

Add the ground beef to the soup pot, turn down to medium low heat.

Dice tomatoes and shred lettuce and then add to the mixture.  Stir to combine and turn to low heat until ready to heat.

I NEVER would have thought that lettuce in a soup would be good, but it really, really is!

This is comfort food at its greatest, ladies! MMMMMMMMM

Now, what’s the damage you may ask?  Well, it’s not horrible, really!

Servings:  This makes about 14 cups of mixture—so 9 servings

Per serving (1.5 cups);

Calories: 359

Fat:  12 g

Fiber: .9 g

OMG Amanda! I also love Food Network but with a husband and 7 year old daughter in the house I either have to sneak away to another room or watch it when everyone is still asleep on Saturday mornings. I saw part of this episode and heard a comment made about the soup but I missed the recipe. Thinking that cheeseburger soup sounded awesome I made up my own recipe and cooked it last night. It was pretty yummy I think. I made mine with ground beef, beef broth, diced tomatoes, cheese dip (friotos brand -mild), ketchup, mustard, salt and pepper and shredded onion. Now that I know the real recipe I will have to make it but I gotta say I kinda like mine and will probably make it again. Thanks!

I’m so glad that you were able to get some inspiration from mine 🙂 I absolutely loved it, but it definitely took some work figuring out the ratios since she made what looked like about 50 portions on the show, and the recipe isn’t anywhere to be found online (BOO!). So, it took quite some time to figure out how the heck to make this just for me and the Mr. I am thinking the next time I make it, I’m going to use a little cream cheese instead of the half&half to make a creamier consistency. We shall see how that works…I will update after I’ve tried it 🙂

Lorrie—I don’t believe so. I could be wrong, but I watched it several times and tried to stay as close to the original recipe as possible. I don’t believe there was mustard in their version, but have since seen another cheeseburger soup that DOES call for mustard.

Can anyone else provide any info on this? I haven’t seen the episode in awhile….

I just watched this episode yesterday and got online as soon as I could to try to find out how to make it (or atleast something close). I am soooo glad to know that I am not the only food channel junkie out there lol. I saw someone ask about mustard, there is NO mustard in the soup she made on the show. Guy made the comment that he thought the cheese sauce was mustard and he was afraid of the thought of that much mustard going into the soup, but that was his mistake. It was not mustard!!! I hope that helps. I haven’t made the soup yet, but I will soon. I’ll be back with results!!!

I have a question. The soup looks pretty hearty but I was wondering if you served something with it or just let the soup be it’s own meal. Also I was wondering what you thought about adding some bacon with the onions???

The soup is very hearty, and although we haven’t had this in awhile, I don’t believe I served anything with it (although I’m sure you could). I think a piece of crusty bread would be DELISH dunked in the cheesy soup…yummmmm

When you say a log of velveeta, do you mean a 1lb log or 2lb? Other than that it sounds like it should be pretty close to what Grover’s makes. I live in the town next to Amherst and I can say personally that Grover’s has some of the most amazing food..

Thank you so much for bringing that to my attention–much appreciated! You are the first to even say anything about that–I’m hoping people aren’t thinking I’m crazy if they used the small log….thinking, “THIS is suppose to be cheesey?!” YIKES! Thanks to our oh-so-wonderful grocery (please note sarcasm here!) here in Indianapolis, we only have 1 option…..2 lb. Believe it or not, I didn’t even know 1 lb logs existed until I visited my parents in their tiny town this past weekend! Shocker, I know!

Thanks to your comment I have made note of the log size in the recipe!!!! I don’t know if you saw on my other comment, but I think the next time I try this I will possibly try some cream cheese or a little heavy cream instead of half-and-half. It definitely tastes very much like a Cheeseburger…very delicious! I loved the wilted lettuce in the soup, but Mr. Amanda said he may like it just as well added when served. Soooo…also take that into consideration. I don’t know if that would make it easier, or more of a pain in the butt! 🙂

One of these day we will make it to NY, and believe me, Grover’s will definitely me on my list of places to go while there…..their food looks FANTASTIC!!!!

I’m so glad that you enjoy my site and recipes! I love the challenge of taking a yummy recipe and making it “available” for those of us looking to watch our waist-line 🙂 I almost consider it a game now..lol
As for a roast…I did make a delicious roast just the other day, but I haven’t added it to the blog just yet and haven’t quite figured out all of the calories just yet (promise that is coming soon, it’s just been ridiculously busy around here lately!). So, here’s a special run down for you 😉 It’s a crockpot recipe, so makes it an easy recipe when you have other things to accomplish…

2 lb of some type of roast (butt, chuck , etc), cut into 1 inch cubes
salt
pepper
~ 1/4 cup whole wheat flour
1 Tb rosemary
1 Tb garlic powder
2 tsp Lawry’s seasoning salt
1 Tb extra virgin olive oil
5-6 carrots (just eyeball it…based on the size of your crockpot)
4 Yukon Gold potatoes
1 large onion or 2 smaller onions
Cooking spray
2 cans cream of mushroom soup
1/2 packet of dry onion soup mix
1 Tb Worcestershire sauce
1/4 c red wine
1 cup beef broth (low sodium if possible)

Trim the fat off of your beef, and then cut into cubes (or just small pieces..makes it easier to dish out at the end). Season all sides with salt and black pepper.

Mix the flour, rosemary, garlic powder and seasoning salt.

Toss the beef cubes in the flour mixture–not to get a heavy coat, but to merely lightly dust the beef with flour.

In a large skillet, heat the olive oil over medium high heat.

Brown the meat, on all sides—not too cook it, but to merely sear the sides (to keep the juice in the meat–makes for a more moist roast). Once seared, set meat aside.

Prepare the veggies–peel the carrots, and cut into 3 or 4 big chunks (depending on how big the carrots are–you don’t want the pieces too small or they will disintegrate in the crock pot). For the onions, just peel and quarter or large chunks. And for the potatoes–I quartered them.

Spray the crockpot with nonfat cooking spray, and then put the veggies in.

Top with the meat.

Then, in a mixing bowl, mix the soup, onion soup mix, worcestershire sauce, red wine, and beef broth.

Pour the mixture over the meat and veggies.

Now, for cooking–you have two options. I was low on time, so I cooked for 2 hours on high, and then reduced to low and cooked for another 4 hours. It was fabulous. The next time, though, in order to make it easier for me, I am going to just cook it on low for about 8 hours…..I think that might be even better—cooking roasts on low makes them oh so tender!

Ok, so that’s my new fab roast recipe. Like I said, I don’t have the calorie count ready for this one yet. But, I would generally say that for 2 lbs, you would generally be talking about 4 servings, when it comes for roast. So you may need to add ingredients as necessary. Also, I’m sure you could still do the same recipe in a Dutch oven, electric skillet (that’s how my grandmother taught me to make roast), in the oven, or a stockpot—using the same ingredients, and just cooking it LOW and SLOW—and ALWAYS searing the meat first!

I hope that’s helpful. I’m going to work on the calories for this today and add it to the blog either tonight or tomorrow!

You are my hero! My wife and I saw this episode a few months ago and decided to try the soup and it was incredible! The only problem, we forgot to write down the recipe. Yesterday we thought about it what a good idea it would be to make it for our superbowl party next week but we couldn’t remember how to do it. You have made our party! The only question I have is in the preperation, my wife is certain and I can’t remember for sure that the flour was added to the sweated onions to make a roux and then adding the broth. Do you think doing it this way would be an issue? Thanks again!

Thank you so much for reading! This will definitely be a fabulous Super Bowl soup….and perfect because I’m from Indianapolis (GOOO COLTS 🙂 ).
The original recipe, that the lady from “Grover’s” showed on “D, D, & D” calls for a slurry (either flour & water or cornstarch & water) to thicken the soup. But, honestly, I don’t think it would make much of a difference adding the flour to the onions/butter. I would just be sure to add the flour early enough to be able to absorb some of the butter (you may need to add a bit more butter..an extra 1/2-1 Tablespoon). You could always add a flour/water or cornstarch/water slurry at the end if it’s still too thin for your liking! It really is a delicious, homey, and comforting soup! The more I talk about it, the more I think I might need to make some this weekend..LOL!

Watched the DD&D’s on your restaurant. My friends, 10-18 adults, go on a cheeseburger hunt each Sunday during winter. I have forwarded the DD&D video + the cheeseburger soup recipe. Will be making the soup this weekend!!!
Their road trips only visit about 50 miles around the Greater N. Kentucky/Cincinnati area.

LOL). I do hope ya’ll enjoy the Cheeseburger Soup recipe, though. I absolutely love it, and is a great soup to comfort you when it’s cold outside, you’re not feeling well, or you’re just a little down in the dumps.

I would probably triple the recipe since the original recipe makes 9- 1.5 c servings. 1.5 cups is quite a bit, but if you triple the recipe, that will only make 27 1.5 c servings, which I think will be more than enough, as some will not eat as much as the serving size!

My husband and I saw this particular show last evening and with a “date night” tonight decided to make your recipe. It is fabulous!!

Originally I looked online for recipes for Cheeseburger soup and I was disappointed in how many recipes called for potatoes. Don’t get me wrong, I love potatoes, but I was looking for the recipe on DD&D – which didn’t call for them. I was very excited to find yours! In fact, my husband asked tonight– “aren’t we supposed to put mustard in this?” and I was quickly able to tell him that debate had already been made – and although he could add it if he would like, it was not on the recipe for Grover’s. LOL!

I have a friend who is a chef and has always said lettuce is a key ingredient in a great soup. Up until now, I didn’t believe him. It REALLY does make a difference.

Thanks for going to the effort to put together the recipe for those of us who need one! It’s always a disappointment when we see someplace on DD&D and know we won’t likely be that direction anytime soon.

So from a couple of folks on a “date night” in Kansas……thanks for making evening fun in our own kitchen!

Speaking of lettuce in something hot – you wouldn’t BELIEVE how adding shredded cabbage adds a little crunch and “juice” to hot chili 😉 We add it fresh at serving time – so not limp – AMAZING and I would have NEVER thought it – not even that big a cabbage fan 🙂

Hi, Wow I JUST turned on the DDD show and didn’t even make it through the intro for the show before I had to hop on Google to see if I could find a recipe for the Cheeseburger Soup! I didn’t even see the segment yet and it made my mouth water! Unreal! I will definitely make the soup sometime very soon. Very, VERY soon! Oh—maybe even tonight!

It’s sooo nice to see other people going nuts to get this recipe & to know I’m not alone here in East Texas. There’s a lot of freezing East Texans right now who are SAINTS FANS that aren’t too happy about the Play-Offs this weekend either!! Thanks sooo much for this delish copycat recipe. My mother used to eat at Grovers for many years. I was very happy to find this recipe. Made it today and I cannot believe how much it tastes like a very high end cheeseburger. I even used fat free half and half but couldn’t find light velveeta, but it is sooo worth the calories. I am going to the grocery store to buy the ingredients today. Can’t wait to try it! Thank you for the info and I truly appreciate the service you are providing to us other Food Network fans. Not sure where you’re from, but here in ole Indianapolis, we’re definitely in need of some warm, comfort food about now (as the snow makes its way in..grrr). I made your first version of cheeseburger soup and it was the hit of the Packer victory party over the Bears. Hey Amanda ! Thanks for the putting a practical twist on the Cheeseburger Soup recipe. I really apreciate your attempt to make the the recipe more healthy(if Cheesburger Soup could ever be could ever considered healthy). Using Fat Free half and half , light butter, and reduced sodium chicken broth really knock some of the calories off this already heavy soup. Oh, and you get extra brownie points for racking up the nutrition facts. As a Health Nut in training, I’m always looking for the facts. Thanks alot and Keep up the good work !

If you want to freeze it, you should probably put in the lettuce/tomatoes only in the part you are going to use and use fresh when you defrost the unused portion. Also, not quite sure how velveeta would stand up to the froze and re-heated test, but if you use the canned nacho/cheese sauce it should be okay.

Wow….I saw the show for the cheeseburger pie for the first time yesterday….April 12,2011 I must say, it grabbed me too….it’s all I’ve been thinking of. I’m out of velvetta because we made mac/cheese yesterday…:)
Prefer pork, and have my own homemade turkey broth. Like the cream cheese idea, so will use that too.

Good to see so many food fans! I just watched and wrote down everything I saw. One thing I noticed was that she used chicken base, not beef – so chicken broth would be a nice, lighter backdrop. Also, you can buy the canned cheese at your local store. It is nacho cheese sauce and is located near spaghetti and pizza sauces, and it is sold in small soup sized cans or large value cans. I think this would add a great flavor, and be much easier than melting velveeta. Thank you! Thank you for the recipe. My husband and I watch the diners,drive ins, and dives all the time, and when we saw the cheeseburger soup we both looked at one another and starting to drool. Then I have been looking all over creation looking for the recipe so I can make it and try it out and OMG!! it is out of the world!!! My whole entire family loves it. I wasn’t sure the lettuce or the tomatos was going to taste right with it,but, I was amazed how it work so good together. Thanks a million for posting this recipe. OMG!! sooo excited!! i live in texas right now, itz 1 in the morning and watching a triple D marathon when i saw this episode. i’m pregnant and most things don’t look or sound good these days or what does sound good is not safe to eat, but cheesburger soup is safe and seems mouthwatering!! i spent an hour looking for the recipe closest to the original and as soon as i saw yours i was in heaven!!! thank you thank you thank you!! hope my almost mother-in-law will buy the ingredients and help me make it!! can’t wait to try it!!!!!!!

Nice to find an alternative post to the loads of fat, sodium and carbs in the recipe on DD & D. I always look for these types of ingredients. I think we’re beginning to wake up to additives we don’t need and look for more healthy choices. I’ll be using no sodium broth (can always add, but not taken away) and let each person decide their own salt content, but only if they ask. I don’t put salt on my table, but have it if someone wants it. By the way, Velveeta comes in 8 oz. packages too!

The only critique I have is your statement, “[…] comfort food at its greatest, ladies!” I felt left out. I’m the man of the house and I’m also the chef of the house too. I cook better than my wife; she knows it and just wanted you to know guys like to cook too and would be visiting your page just like I am, in addition to the “ladies”.

As for the 8oz Velveeta–if you can believe it, I can’t find it anywhere around here! I’ve looked, as my parents can find it at their tiny grocery in my small hometown, but it doesn’t seem to be a priority in the groceries here in Indianapolis!

OK, just an update! I just got done making this and WOW, it’s delicious! It really does taste JUST LIKE a cheeseburger!! I was amazed how the lettuce stayed crisp and I’m very curious as to how the leftovers will taste tomorrow. I followed the recipe exactly except I used regular half and half (not reduced fat) and regular sodium chicken broth. Thank you so much for this recipe, it’s comforting and tummy-warming on a cold December night!!

I was wandering if you could use the chedder cheese soup from the can instead of Velvetta. In the soup section of the store you can buy chedder cheese soup. I use it when I make scalloped potatoes and it is really good, so what do you think???

I don’t see why you couldn’t use the soup. However, I do think it will change the ratio of liquid used. Since I haven’t used the soup (or a liquid version of the cheese) I don’t know the specific amounts (as I think the soup may have a more mild cheese taste, requiring a larger quantity). I am going to try this (possibly this weekend) to try it out! Let me know if you do as well and your results!!! Thanks for reading!!

I am making it today with the can soup, and someone mentioned what else a person could make with it as a side dish. Well I think since you are basically making a cheeseburger why not have french fries for your side dish, sounds yuumy to me, just dip the french fries in the soup. I will let you know how it turned out. I sure wished I knew what kind of cheese she put in her soup though. TTYL

I think she used just a liquid cheese (like a nacho cheese sauce). Honestly, I don’t know that it would make much of a difference, as I think it’s simply a restaurant secret so they don’t have to keep cheese as a perishable (if that makes sense). One word of caution with the side of fries—the soup is very filling, rich, and heavy. You may want to have a little less soup for each serving if you have fries too–otherwise, you may feel like you want to explode before you’ve made much of a dent in your soup 🙂 Just my two cents 😉

Made the cheeseburger soup tonight because Its National Soup month, don’t you know. I saw the show over the weekend on the inertnet and just had to try it. I did one thing a little different though, I put a little cummin in while browning the meat, adds just a little zing, even my 2 licky teens said oh dad you have to make this again.

Made the cheeseburger soup today, fabulous.. I made one addition, Yellow Mustard, it gave a small bite to the soup. I’m going to serve it, Super Bowl Sunday, with soft pretzels and beer. I have other ideas to tweak the soup, bacon crumbles, additional cheese (blue comes to mind), pickles or pickle juice.

I’ve been looking for this recipe and was happy to finally find it. The ww points is a bonus! I made mine with light velveeta, skim milk and 90% beef and it was just as good. I also sautee the onions in a non stick pan with a little beef broth instead of butter. A crumble of bacon bits (10 calories a T) to garnish and you have a wonderful healthier version.

Thank you so much for the kind words! As for my corn chowder–it is here on my blog “smack the sick out of ya’…..”. Mine isn’t extremely thick,
but not runny either. Yes, some are much thicker and more chowder-like, BUT most of those are also extremely high in fat and calories. Although mine is a little thinner, it could be thickened with a little cornstarch slurry.

I’m going to my kids’ house for poker night and want to show off with this soup! Do you have any hints for “make ahead” time? Can you do the cheese mixture and beef separately and then add them together with the cheese just prior to serving. I’m afraid if I make it ahead of time and bring it over it will lose something.
